High Protein Fruit Crumble

INGREDIENTS:

FRUIT FILLING 

  • 3 peaches, pitted and chopped
  • 1.5 cups blueberries (fresh or frozen)
  • 1 tbsp almond flour
  • 2 tbsp maple syrup
  • ½ tbsp cinnamon

CRUMBLE TOPPING

DIRECTIONS:

1. Preheat oven to 375°F.

2. In a medium bowl, mix all fruit filling ingredients together until the fruit is fully coated and glistening. Then, pour the filling into a cast iron skillet.

3. In another clean bowl, mix together the crumble topping ingredients using a fork or your hands to work the softened butter into the rest of the ingredients. You’ll want the texture to resemble “crumbles” and not be too solid or too fine. (Too solid = too much liquid. Too fine = not enough liquid.) Then, add crumble overtop of the fruit filling.

4. Bake in the oven for about 35 minutes or until the fruit filling is bubbling and the crumble topping is a toasty golden brown.

5. Let cool for 5-10 minutes before serving in bowls with some whipped topping or ice cream.
