Mint Chip Ice Cream
INGREDIENTS:
- 1 (400ml) can of coconut cream
- 2 scoops Raw Organic All-In-One Shake Vanilla
- 1/2 cup maple syrup
- 1/2 ripe avocado, diced
- 1 tsp vanilla extract
- 2 tsp peppermint extract
- pinch of salt
- ¾ cup chopped dark chocolate
DIRECTIONS:
1. Mix all ingredients (except the chocolate) in a food processor or blender.
2. Pour half of the mixture into a loaf pan, spread half the dark chocolate overtop, then repeat for the remaining half. Let freeze overnight or for at least 4 hours.
3. Dig in and enjoy!
