No- Bake Chocolate Peppermint Protein Truffles

Serves 12

INGREDIENTS:

Toppings:

  • 1 regular-sized candy cane, crushed

  • 80 g Dark Chocolate

DIRECTIONS:

  1. Add all ingredients into a mixing bowl and combine. It should end up being pretty crumbly and fall apart into your hands.

  2. Start adding water as needed, about a tablespoon at a time, and knead it until it reaches a consistency where it comes together. You don't want any of it to crumble apart at this stage.

  3. Roll into 12 evenly sized balls. (Note: I cut the dough in half, then separated each half into six equal portions to help with ensuring I had enough dough for all 12 truffles.)

  4. Place it in the freezer to set.

  5. Meanwhile, melt the chocolate down until it is a nice, smooth texture - either on a stovetop or in a microwave-safe bowl at 30s at a time.

  6. When your truffles have frozen enough, dip them into the melted chocolate - just so the top half is covered - and then dunk into the crushed candy cane (or sprinkle overtop!) and set on a baking tray lined with parchment paper.

  7. Do this to all 12 of your truffles, then pop them back into the freezer so everything comes together nicely.

  8. Enjoy!
