Chocolate Cherry Cheesecake Protein Cups

Ingredients
Base:

3/4 cup old-fashioned rolled oats, ground into flour

3/4 cup cottage cheese

2 scoops Garden of Life Raw Organic Chocolate Protein Powder

1 tbsp cocoa powder

1.5 tbsp pure maple syrup

1 cup almond milk

1 tsp salt
Toppings:

1 cup pitted black cherries, roughly chopped

Crushed graham crackers

Prepare the Base:
In a blender or food processor, combine ground oats, cottage cheese, chocolate protein powder, cocoa powder, maple syrup, almond milk, and salt. Blend until smooth and well combined. -
Adjust Consistency:
If the mixture is too thick for your liking, add a little more almond milk until the desired consistency is reached. (Keep in mind, the consistency will thicken overnight!) -
Refrigerate:
Pour the blended mixture into a storage container. Cover and refrigerate overnight to allow the base to thicken. -
Assemble the Cups:
In the morning (or once set), layer the thickened chocolate cheesecake base with chopped cherries, a dollop of whipped topping, and a sprinkle of crushed graham crackers in serving cups or bowls. -
