Carrot Cake Chia Pudding


2 small-medium carrots, peeled & roughly chopped
1 cup milk of your choice
1/4 cup Greek yogurt or coconut yogurt
2 scoops Garden of Life grass-fed collagen powder
1 tbsp maple syrup
1 tsp vanilla
1/2 tsp cinnamon

For the Cream Cheese "Frosting":
2 tbsp cream cheese
2 tbsp yogurt
1 tbsp maple syrup


1. Blend together the carrots, milk, yogurt, collagen powder, maple syrup, vanilla, and cinnamon until smooth.
2. Add 4 tbsp chia seeds and blend just until incorporated.
3. Pour
 the mixture into 2 jars.
4. Sprinkle 1 tbsp raisins into each jar and gently mix.
5. Refrigerate overnight.

Before serving, generously TOP with crushed pecans and a dollop of cream cheese "frosting" for an extra touch of deliciousness!
