PB&J Bars

Serves: 16

Ingredients:

  • 1 ½ cups almond flour
  • 1 cup powdered peanut butter
  • 1 cup Coconut Oil melted
  • ¾ cup coconut palm sugar
  • 1 scoop Garden of Life Raw Organic Protein - Unflavoured
  • 1 cup strawberry preserves (jam)
  • ½ cup peanuts roasted and unsalted
  • ¼ teaspoon sea salt

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together the flour, powdered peanut butter, coconut palm sugar, salt, and protein powder.
  3. Add in coconut oil and mix again until the batter is crumbly.
  4. Spray an 8x8 brownie pan with coconut oil spray (or use Garden of Life coconut oil) and press about ¾ of the batter into the pan.
  5. Cover the bottom layer with the strawberry preserves then evenly sprinkle the remaining batter on top along with the peanuts.
  6. Bake for 25 minutes then let cool before cutting.
  7. Store in refrigerator for up to 1 week.
