Apple Cranberry Crisp

Serves: 4

Ingredients

Use Organic if possible

  • 4-5 medium apples (such as Gala or Fuji)

  • ¼ cup dried cranberries

  • 2 Tbsp coconut palm sugar

  • ½ Tbsp arrowroot powder

  • 1 tsp cinnamon

 

Topping:

  • ¾ cup gluten-free rolled oats

  • ¾ cup chopped pecans

  • ½ cup oat flour

  • 1 scoop Garden of Life Raw Organic Protein Vanilla

  • ¼ cup maple syrup

  • ¼ cup of Coconut Oil room temperature

  • 1 tsp cinnamon

  • ½ tsp sea salt

Preparation

  1. You will need 4 individual-sized ramekins.

  2. Peel and chop apples.

  3. Place chopped apples in a bowl and toss with cranberries, coconut palm sugar, arrowroot powder and cinnamon.

  4. Spray each ramekin with coconut oil then put equal amounts of apples in each.

  5. Next, mix together all topping ingredients until crumbly.

  6. Add equal amount of topping on top of each apple filling then bake for 35-40 minutes at 350 degrees.

  7. Let apple crisp cool a little before serving with your favorite ice cream.
